My Ricotta Salata is up...which I actually liked. Not my favorite cheese of all-time, but good for what it was. Salty, milky...delicious also crumbled ito warm pasta!!!

Yah! My first entry! I am officially a cheeseslut! :) thanks for challenging me to go beyond my culinary boundaries! I had so much fun doing this. I liked the cheese, but it is a bit salty, I guess that is where the salata comes from! Good as a condiment for sure, and mine turned out very well! Thanks for all the info and what a lovely website! Alex@amoderatelife

My salata is still in the fridge, curing - but I had made a large batch of ricotta for it and used the rest in a pasta dish - attached. Yum!

Just in time, I posted my ricotta salata write-up (why do I always leave things to the last minute?). I agree with others who've commented. This is a fine cheese for using in other things, but on its own it's mostly just milky and salty. But I'm glad I made it because I learned a lot in the process. Thanks for the challenge!

And welcome and congrats to all the first-time cheesemakers in the group!

Haha I am like ms. poppyseed - totally out of sequence. but i made 2 types of cream cheese and mascarpone though! will definitely do cheddar and ricotta next month!
